Eleven Madison Park  is a plant-based fine dining restaurant overlooking Madison Square Park in New York City. First opened in 1998 as a French brasserie, the restaurant has been headed by Chef Daniel Humm since 2006 and owned by his company Make it Nice Hospitality since 2011. Eleven Madison Park has evolved significantly under his leadership both in food and in experience, earning several accolades including 4 stars from the New York Times and 3 stars from the Michelin Guide.

In 2021, Eleven Madison Park reopened its doors post-pandemic as a completely plant-based restaurant. The desire to reinvent and push the boundaries of fine dining has always been at the heart of Eleven Madison Park, and the team is committed to showcasing our respect for the craft through the precision of our cooking, the elegance of our service, and the passion for our work. 

In 2024 the team partnered with artist Francesco Clemente to design and open Clemente Bar, upstairs at EMP. Clemente Bar is a 35-seat cocktail bar, serving plant based bar snacks and an 8 seat counter serving a 5 course tasting menu with cocktail pairing.

Summary of Position :

The Culinary Administration & Procurement Manager is a dual functioning role, overseeing the purchasing and inventory operations, in addition to supporting the restaurant teams through various administrative responsibilities. 

This position will own the daily purchasing responsibilities for Eleven Madison Park, as well as Clemente Bar; including but not limited to: placing and receiving orders, maintaining relationships with vendors and suppliers, as well as reviewing purchase orders for accuracy. This person will evaluate trends and analyzes purchasing habits to identify cost savings, as well as identify and implement cost saving systems throughout the current operations.

In addition to the daily purchasing responsibilities, this person will share culinary administration responsibilities such as, recipe costing and product sourcing and staff education. This person will work closely the CDC and Creative Culinary Director, outside vendors and artists, as well as interface with our partners at Magic Farms.

 

Duties and Responsibilities:

  • Manage the daily procurement of food and other disposables such as cleaning supplies, paper goods, linen, and other items necessary for daily operations.
  • Place daily orders and manage vendor relations for Eleven Madison Park and Clemente Bar. This includes on site purchasing at the Union Square Greenmarket.
  • Be the on-site contact for planning and receiving Magic Farms deliveries.
  • Monitor Food safety standards for receiving and storage.
  • Monitor food waste and the communications with Rethink Food NYC.
  • Conduct monthly inventories
  • Maintains organization of kitchen storage areas including dry storage, walk-in refrigerator and produce cooler.
  • Work with kitchen management staff to ensure that all DOH standards are adhered to and maintained.
  • Approve purchases and track their progress to make sure orders are filled and delivered correctly.
  • Review invoices for accuracy and to make sure the best prices are obtained
  • Maintain internal database of approved vendors
  • Maintain updated records of purchased products and invoices
  • Code invoices and submit for payment.
  • Cost new menu items and manage spending as it correlates to the budget.

 

Qualification Standards:

  • Excellent verbal and written communication skills
  • Basic math skills
  • Strong organizational skills
  • Proficient in Microsoft Office Suite
  • Ability to troubleshoot proactively and creatively to meet team needs
  • Ability to stand for long periods and lift 50 lbs
  • Hospitality background preferred
  • M-F with some weekends required
