Located in Woodland Hills, we are an esteemed 5-star dining establishment celebrated for its commitment to culinary excellence. Our pastry and baking program is seeking a dynamic Pastry Chef to lead our team in crafting unparalleled dessert experiences. We are seeking a Pastry Chef with specific experience in European Pastries and bread baking.

Responsibilities:

  • Menu Development and Innovation:
  • Spearhead the creation of cutting-edge European dessert menus, showcasing creativity and a deep understanding of flavor profiles.
  • Conduct ongoing research on industry trends, incorporating avant-garde techniques and ingredients into pastry offerings.
  • Meet timelines and deadlines for new tastings as directed by Executive Managers and Ownership

Production Mastery:

  • Oversee the meticulous daily production of exquisite pastries, desserts, and baked goods for a high volume, fine dining restaurant.
  • Ensure precision in execution, maintaining the highest standards in taste, presentation, and portion control.
  • Ensure adherence to all food and safety protocols, including health department and other relevant governing bodies.

Quality Assurance:

  • Establish and enforce rigorous quality control measures to uphold Casaléna's reputation for excellence.
  • Conduct regular tastings, seeking continuous improvement and refinement.

Leadership and Team Development:

  • Lead and inspire a team of skilled employees, fostering a collaborative and innovative kitchen culture.
  • Provide mentorship, training, and support for professional growth.

Collaboration and Communication:

  • Collaborate seamlessly with other culinary teams, ensuring a harmonious integration of savory and pastry offerings.
  • Take direction from ownership and executive management, aligning pastry programs with broader business goals and directives.

Reporting Structure:

  • Report directly to the Executive Chef, Kitchen Managers and Ownership, providing regular updates on pastry operations, challenges, and achievements.

Adaptability and Flexibility:

  • Demonstrate the ability to adapt to changes in directives, responding positively to new challenges and opportunities.
  • Implement ownership and executive management directives efficiently, ensuring alignment with the overall vision of Casaléna.

Qualifications:

  • Proven track record as a Pastry Chef in a high-end or Michelin-starred restaurant preferred
  • Culinary degree or equivalent certification in pastry arts preferred
  • Exceptional proficiency in pastry techniques, flavor combinations, and artistic presentation
  • Innate creativity and a passion for pushing boundaries in the world of pastry arts.
  • Outstanding leadership, communication, and interpersonal skills.
  • Ability to thrive in a fast-paced, team oriented, and high-pressure kitchen environment.
  • Meticulous attention to detail and an unwavering commitment to maintaining exceptional standards.
  • Creativity and innovation in menu development.
  • Familiarity with kitchen equipment and appliances.
  • Flexibility to work evenings, weekends, and holidays as needed.
  • Ability to stand for extended periods.
  • Lift and carry heavy pots, pans, and kitchen equipment.
  • Work in a hot and fast-paced kitchen environment.
  • Performing the duties of this job, the employee is regularly required to stand for extended periods of time, twist at the neck and trunk, bend at the waist and stoop, kneel, crouch, or crawl.
  • The employee is occasionally required to reach with hands and arms, reach overhead, above shoulders and horizontally.
  • Employees will use hands to handle objects and tools, and operate service to lift and/or move heavy objects (40+ lbs).
