Upscale-casual Italian restaurant in Chelsea led by a James Beard award-winning chef and best-selling cookbook author, searching for an Executive Pastry Chef. We are looking for talented, hardworking, team and hospitality-oriented individuals who can help us create a warm and welcoming environment that serves thoughtful and delicious food and beverage offerings. We want serious people who know how to have fun.

As the Executive Pastry Chef, you are responsible for operating the pastry section of the kitchen while working closely with the Executive Chef. The Executive Pastry Chef will also be required to   plan   production and develop seasonal offerings. You are to create high quality pastry program that will impact the culinary experience at Portale

Responsibilities:

• Plan, implement and manage daily operations
• Prepare menus
• Suggest new menu items
• Understand guest preferences and make suggestions based on findings
• Prepare a wide variety of goods such as cakes, cookies, pies, bread 
• Monitor supplies and ingredients necessary for daily operations 
• Check quality of material and condition of equipment 
• Train, guide and motivate pastry assistants 
• Identify staffing needs and help recruit and train new employees
• Keep abreast with the latest food and industry trends

• Follows proper DOH handling and right temperature of all food products.
• Decorate pastries and desserts using different types of icings, toppings etc. and ensure the food presentation will be beautiful and exciting.
• Supervise and coordinate all pastry and dessert preparation and presentation.
• Helps lead how food should be presented and creates decorative food displays.
• Monitor stocks for baking   ingredients such as flour, sugar etc. and make appropriate orders within   budget.
• Check quality of material and condition of equipment and devices used for cooking.
• Schedule and attends employee meetings and brings suggestions for improvement.
• Able to recognize superior quality products, presentations and flavors.
• Operates and maintains all department equipment and reports malfunctions.
• Ensuring Culinary Standards and Responsibilities are Met for Pastry Team.

Requirements and qualifications:

• Previous working experience as Pastry Chef for 3+ years 
• Certificate in culinary arts or similar relevant field
• In depth knowledge of sanitation principles
• 2+ years of experience in food preparation and baking techniques and nutrition
• Applicable knowledge of baking with ingredient limitations (pastries that are gluten free, sugarless etc.)
• Excellent organizational and time management skills
• Great attention to detail and creativity
• Great interpersonal and leadership skills
• Friendly attitude
• Strong passion for the art of food design
